Mediterranean Hummus Bowls

Serves 4

Ingredients

2 cups prepared hummus

2 cups cooked brown rice or quinoa

4 cups fresh arugula, spinach, or other salad green

1/2 pint cherry tomatoes, halved

1 English cucumber, diced

1 (14.5 oz) can chickpeas, drained and rinsed

1 cup good quality pitted olives

Extra virgin olive oil for serving (optional)

  1. Place all ingredients in serving bowls and drizzle with additional olive oil if desired.

Tips

  • A splash of hot sauce will be nice with this, as well as a squeeze of fresh lemon juice.

  • Feel free to adjust the amounts of everything to suit your tastes.

  • Cherry tomatoes can be substituted with any other type of tomato, but choose something high quality and fresh for the best eating experience.
