No-Cook Peach Balsamic Flatbread

Serves 4

Ingredients

1 large avocado, peeled and pitted

1 tbsp. extra-virgin olive oil

Salt and pepper to taste

2 pieces of naan bread

1 large peach, pitted and sliced

1 cup fresh arugula

Balsamic glaze to taste

  1. Mash the avocado with the olive oil and salt and pepper to taste.

  2. Spread avocado mixture onto naan. Top with peaches and fresh arugula.

  3. Drizzle balsamic glaze on top to taste.

Tips

  • The naan will be better if slightly warmed or toasted, but it’s good either way.

  • A few slices of red onion make a nice addition to this recipe.
