15 Minute Mushroom Avocado Tacos

Serves 2

Ingredients

2 tbsp. extra-virgin olive oil

1/2 large white onion, chopped

8 oz. mushrooms, sliced

1 tsp. soy sauce

1 tsp. chili powder

1 tsp. paprika

Salt to taste

6 corn tortillas, warmed

1 small tomato, chopped

1/4 cup roasted unsalted pumpkin seeds

1/4 cup chopped fresh cilantro

  1. Heat oil in a large skillet over medium heat. Add onion and cook for 3-4 minutes, until slightly softened. Add mushrooms, and cook for another 2-3 minutes.

  2. Add soy sauce, chili powder, paprika, and salt to taste, and saute for another few minutes until the mushrooms and onions are fully cooked.

  3. Place mushroom and onion mixture on a tortilla, and top with tomato, pumpkin seeds, and rrsh cilantro. Serve with favorite salsa or hot sauce.

Tips

  • Black beans would make an excellent addition to this taco.
