20 Minute Asparagus Avocado Flatbread

Makes 2 small pizzas

Ingredients

1 tbsp. extra-virgin olive oil

1/2 lb. asparagus, trimmed, and cut into 1” pieces

1/2 small red onion, halved and sliced 

8 oz. fresh Mozzarella cheese

2 pieces naan bread

1 large avocado, peeled, pitted, and sliced 

Balsamic glaze to taste (or ~2 tsp. of balsamic vinegar)

1/4 cup arugula or fresh chopped parsley (optional)

Salt and pepper to taste 

  1. Preheat oven to 450F. Heat a small skillet over medium heat. Add the asparagus to the pan, and lightly cook for 2-3 minutes. 

  2. Place naan on a baking sheet, and cover with small pieces of Mozzarella cheese. Top with cooked asparagus, and onion. Bake for 10-12 minutes, until the cheese is lightly browned and bubbly.  (or to speed it up, bake for about 6-8 minutes, and broil for 2-3 minutes at the very end to melt the cheese faster).

  3. Garnish with a arugula or parsley and drizzle with balsamic glaze (or lightly splash with balsamic vinegar).
