Hummus Breakfast Pizzas

Inspired by a delightful brunch experience in my city of San Francisco, my mind was literally blown when I had hummus on pizza for breakfast for the first time. Such a great combination, and such a great way to make breakfast healthy and fun!    

7 ingredients and less than 20 minutes is all it takes to make these delicious Hummus Breakfast Pizzas. Creamy hummus with fresh mozzarella cheese, fresh veggies, and a runny egg, and breakfast is a WIN. Perfect for a relaxing weekend brunch or an on-the-go weekday morning.

Hummus Breakfast Pizza

Servings: 4

Ingredients

4 rounds pita bread

1/2-3/4 cups hummus

8 oz fresh Mozzarella cheese

1 1/4 - 1 1/2 cups halved cherry tomatoes

1/2 cup sliced olives

4 eggs

Salt to taste

  1. Preheat the oven to broil, and place the top oven rack onto the bottom third section of the oven. Spread equal amounts of hummus on each piece of pita bread

  2. Top with cheese, followed by tomatoes and olives. Make sure to leave a hole in the center of the pizza with no toppings to crack the egg into.

  3. Crack and egg into the center of each pizza, then bake for about 6-8 minutes, until the egg whites are set and the yolk is still runny, or to desired doneness.

Tips

  • I know that broiling with the oven rack on the "bottom third" of the oven might seem a little strange, but I re-tested this recipe about 6 times (because I couldn't get the egg to cook right) and this is how I got my eggs to cook PERFECTLY, so you'll have to trust me on this one 

  • Other ingredients that would be super tasty for this recipe - tomato sauce, sun dried tomatoes, roasted red peppers, spinach, etc. I did a version with roasted red peppers and it was super good!
