Tofu Sofritas Burrito Bowl

Serves 4

Tofu Sofritas

1-3 chipotle peppers*

2 tbsp. adobo sauce (from can of chipotle peppers)

2 cloves garlic

2 tsp. cumin

1 tsp. chili powder or paprika

1/2 cup salsa*

2 tbsp. olive oil

1/2 tsp. salt

1 (14-16 oz.) package extra firm tofu, drained, pressed, and diced*

Additional Ingredients

Cooked brown rice*

Sliced romaine lettuce or cabbage

Black beans

Additional salsa

Fresh or cooked corn (optional) 

Roasted pumpkin seeds (aka pepitas) (optional) 

Serve with fresh lime wedges (optional) 

  1. To make the sofritos, place chipotles, garlic, spices, and salsa in a small food processor and puree. 

  2. Heat olive oil in a medium skillet over medium high heat. Scramble the tofu into small bits with a spatula or wooden spoon, and cook until lightly browned, about 3-5 minutes. 

  3. Add prepared sauce, and 1/2 cup of water. Bring to a simmer, and cook for 15-20 minutes, uncovered, until the sauce is richly colored and thickened slightly. Add more water as necessary, and season with salt to taste. 

  4. Add tofu to bowls with remaining ingredients. 

Notes

  • Chipotle peppers come in a small can. Chipotles are smoked jalapeños, packed in adobo sauce. Generally, you will use the chipotle peppers, and add some of the sauce from the can to most recipes. I LOVE chipotle peppers because they’re very flavorful and easy to cook with, but they do have some heat. I like to use about 3 in a recipe, but if you’re not as great with heat, I’d recommend using 1-2

  • Use whatever salsa you like. You can also make your own, but I would recommend using a store bought salsa right now to keep things simple.

  • If you do not know how to drain tofu, check out this tutorial - 

  • Diced means to cut into dice sized shapes. Ask Al for help if you’re unsure about how to do this.

  • The most fool proof way to cook brown rice is to cook it like pasta - make a big pot of boiling water, and add a cup or two of dry, uncooked brown rice, and let it simmer for about 30 minutes, then drain it. It’s a very untraditional way of cooking brown rice, but it works great every time. Make sure to use way more water than brown rice.
