Tahini Sauce

Makes 4-6 servings

Ingredients

1⁄2 cup tahini

1⁄4 cup extra-virgin olive oil

1⁄4 cup lemon juice

Salt to taste

  1. Place all ingredients together in a bowl and stir to combine. Thin with a little water if too thick.

Tips

  • You can definitely give this a shot without the olive oil. Just add some water and maybe a bit more lemon and see how it tastes! But of course, it will always taste better with oil.

  • Sometimes this sauce has a tendency to clump up a bit (it almost looks like it’s “curdled,”) but just add a little bit more water, and keep stirring, and it will thin out, guaranteed.

Bowl suggestions - chickpeas, cucumber, red onion, bell peppers, olives, any type of nut or seed, any type of salad green (arugula, spinach, baby greens, green leaf lettuce, etc.), grins (quinoa, brown rice, millet, etc.)
