Indian Masala Chicken

Servings: 2-4

Ingredients

1 (15 oz.) jar Trader Joe’s Masala Simmer Sauce*

1 cup veggie broth

1 lb. chicken thighs

1 (14.5 oz.) package Trader Joe’s Mirepoix Mix

5 oz. chopped Tuscan Kale (a few good handfuls of greens)

1 (14.5 oz.) can chickpeas, drained and rinsed

Salt and pepper to taste

  1. Place simmer sauce and broth in a large pot. Bring to a simmer over medium high heat.

  2. Add chicken and mirepoix mix. Bring back to a simmer, cover, reduce heat to low, and let cook for about 15-25 minutes, until veggies and chicken are tender.

  3. Add the chickpeas and kale, and cook for another 5 minutes. Remove from heat, and serve.

*This recipe is specifically using a Trader Joe’s product - Indian Masala Simmer Sauce, so you will need to get that at Trader Joe’s if you’d like to make this recipe.

Tips

  • This recipe can easily be vegetarian without the chicken. See vegetarian options below.

  • You can try adding everything all together, including the chickpeas and kale, as opposed to adding those ingredients in later. Chickpeas can get overcooked if you simmer them for too long, but they might be fine in this recipe.

  • I’m not entirely sure how much broth you will need. Start with 1/2 of a cup, and add more as needed. You may also use water instead of broth of you’d like. It might be slightly less flavorful, but it may also be just fine!
