Cauliflower or Broccoli Avocado Pizza

Serves 2

Ingredients

1 trader Joe’s cauliflower or broccoli pizza crust*

½ can tomato sauce

1 large avocado, peeled and sliced

½ container trader Joe’s microgreens*

¼ cup pumpkin seeds

  1. Preheat oven to 450°F. Place frozen cauliflower crust on a baking sheet, and cook for about 20 minutes.

  2. Add tomato sauce, and cook for another 5 minutes.

  3. Add sliced avocado, and top with microgreens and pumpkin seeds

*The cauliflower/broccoli pizza crusts and the microgreens are Trader Joe’s specific ingredients, so you’ll need to buy these items there if you’d like to make this recipe.

Tips

  • If you’d like to substitute the avocado for cheese, go for it! This is a recipe I made for a specific client who was avoiding cheese and she loved it.

  • I prefer the cauliflower pizza crust, but my client who I developed this for prefers the broccoli crust. Both crusts will be n the frozen section at TJ’s.

  • Add any additional pizza toppings you like!
