Balsamic Quinoa and Brussels Sprouts Salad

Serves 4

Ingredients

3 tbsp. extra virgin olive oil

2 tbsp. balsamic vinegar

2 tsp. tahini

salt and pepper to taste

1 lb. roasted Brussels sprouts

1 1/2 cups cooked quinoa, cold

1 green apple, cored and sliced

1/2 cup crumbled walnuts

1/2 cup shaved Parmesan cheese, plus more for garnish (optional)

  1. In a small bowl, stir together olive oil, balsamic vinegar, tahini, and salt and pepper to taste. Set aside.

  2. Place the Brussels sprouts, quinoa, sliced apple, walnuts, and parmesan cheese in a large bowl.

  3. Drizzle with dressing and, and gently toss to combine. Top with extra shaved Parmesan cheese for garnish.
