GF Socca "Garlic Bread" (Italian Chickpea Flatbread)

Serves 4

Ingredients

1 cup chickpea flour

1 tsp salt, plus more to taste

1 tsp freshly ground black pepper

5 tbsp extra virgin olive oil, divided

1 tbsp butter, at room temperature

2-3 cloves garlic, minced

1/4 cup chopped fresh parsley

1/4 cup shredded parmesan cheese (optional) 

  1. Heat oven to 450F, and place an oven safe skillet inside. Stir together chickpea flour and salt in a mixing bowl, and slowly whisk in 1 cup of lukewarm water, whisking constantly to avoid clumps. Stir in 2 tbsp olive oil. Let rest while oven preheats.

  2. Stir together, butter, olive oil, garlic, parsley, and a pinch of salt to taste.

  3. Remove the pan from the oven, and swirl in another 2 tbsp of olive oil to coat. Pour in batter, and place back in oven, and cook for about 10-15 minutes, until the “pancake" is set. 

  4. Remove the pan from the oven, and turn the oven to broil. Spread with butter and garlic mixture, and return pan to broiler for another 3-4 minutes, until lightly browned on top.

Tips

  • Preheat the pan VERY thoroughly before adding the batter. If the pan is not hot enough, the pancake may stick a bit.

  • Cast iron works best for this, but a stainless steel pan will work as well.

  • Want to make this vegan? Skip the butter and just spread olive oil, garlic, and herbs on top.
