Peanut Butter Chia Oatmeal

Ingredients

1/2 cup old-fashioned rolled oats

2 tsp. chia seeds

2 tsp. ground flaxseed

3/4 cup non-dairy milk

2 tbsp. peanut butter

1/2 cup roasted nuts (peanuts, almonds, slivered almonds, etc.)

1/2 cup chopped fruit (strawberries, banana, apples, etc.)

  1. Place the oats, chia seeds, and non-dairy milk in a medium bowl, and microwave for about 1.5-2 minutes, until milk is absorbed, and oatmeal is at desired texture.

  2. Top with peanut butter and nuts, and fold to gently combine.

  3. Top with fresh fruit

Tips

  • This recipe is only made for one serving, but if you want to make a bigger batch, you can make the oatmeal on the stovetop or microwave a larger batch

  • This recipe is actually what I eat every morning for breakfast! I generally use oat milk, and top it with roasted salted peanuts, and whatever fruit is in season. During the summer months, it’s strawberries and/or blueberries, in the fall it’s chopped apples, and in the winter it’s either bananas or pomegranate arils

  • You can also use steel-cut oats in place of rolled, but you’ll either want to cook them on the stovetop, or you can microwave them in a big bowl with lots of additional liquid for about 4-5 minutes.
