Honey Dijon Brussels Sprouts

I honestly feel so sorry for the folks that have never felt the joys of good Brussels sprouts. I'm sure at some point in their life, someone put a bunch of boiled Brussels sprouts on their plate and said "you need to eat this or you don't get dessert!" Poor, tortured souls...

Roasted Brussels sprouts are literally pure HEAVEN. Take these Honey Dijon Brussels Sprouts for example - lightly charred and tender, sweet and tangy, just pure roasty goodness. Not to mention, they're SUPER easy to make, and only take 7 ingredients! 

If you like Brussels sprouts, and dare I say, even if you DON'T like Brussels sprouts, you are going to like this recipe. Ya, I said it!

Honey Dijon Brussels Sprouts

Servings: 2-4


1/4 cup olive oil

2 tbsp honey

2 tbsp Dijon mustard

3/4 tsp salt

Freshly ground black pepper to taste

1 1/2 lbs. Brussels sprouts, ends trimmed, halved

2/3 cup lightly toasted pecans

  1. Preheat the oven to 450F. Combine the olive oil, honey, mustard, salt, and pepper in a large bowl and stir to combine. Add the brussels sprouts, and toss to coat.

  2. Place on a parchment lined baking sheet, and roast until lightly charred and tender, about 20-30 minutes. Top with pecans.
