Rainbow Thai Salad w/ Peanut Vinaigrette

Serves 4

Peanut Vinaigrette

1/2 cup creamy natural peanut butter

2 tbsp. rice wine vinegar

2-3 tbsp. extra virgin olive oil

1-2 tbsp. lime juice

1 tsp. soy sauce

1 tsp. sriracha (optional)

Salt and pepper to taste

Salad

4-6 oz. brown rice noodles

2-3 cups thinly sliced purple cabbage

1-2 cups thinly sliced cucumber

1 large red bell pepper, halved, cored, and thinly sliced

¼-½ cup chopped roasted peanuts

¼-½ cup thinly sliced green onion (optional)

  1. Combine all dressing ingredients in a medium bowl, and whisk to combine. Set aside.

  2. Cook noodles according to package directions. Rinse with cold water, and chill.

  3. Place noodles, and all additional salad ingredients in separate bowls. Drizzle with dressing, and top with peanuts and green onion.

Tips

  • Trader Joe’s has multiple options for healthy noodles, including noodles with lentils, and other things, so feel free to choose whatever looks good to you

  • You can also increase or adjust the amounts of all of these ingredients to suit your tastes

  • The dressing can be made ahead of time
