Lentil Herb Salad
Serves 4
Ingrediens
1 cup small lentils, cooked*
1 fennel bulb, cored and thinly sliced
1/2 small red onion, halved and thinly sliced
3 tbsp. chopped fennel fronds
3 tbsp. chopped fresh dill
2 tbsp. fresh chopped mint leaves
2 tsp. dried oregano
10 olives*
1/3 cup extra-virgin olive oil
2-3 tbsp. red wine vinegar
Salt to taste
Mix up all ingredients in a large serving bowl to combine.
