Pita Bread Pizzas
4 rounds whole-wheat pita bread
1/2 cup prepared marinara or tomato sauce
6 oz. fresh Mozzarella cheese, torn or sliced into small dime sized pieces
Toppings of your choice (examples below)
Preheat the oven to 425℉. Place the pita bread rounds on a baking sheet, and spread with equal parts tomato sauce. Add cheese and toppings, and bake for about 7-9 minutes, until the cheese is slightly bubbly and the toppings are cooked, or to desired doneness.
Technically you do not have to use fresh Mozzarella, but I always use fresh when I’m making pizza. A standard bag of shredded Mozzarella will work just fine, but you can’t beat the creamy-ness that you get with fresh!
To make clean-up easier, line your pan with parchment or foil. This way if any sauce or cheese spills off the pizzas, it won’t ruin your pans.
Super Easy Combinations (little to no prep involved)
Sun dried tomatoes, chopped olives, torn fresh basil
Diced green chiles, corn, olives
Roasted red peppers, artichoke hearts, walnuts
Spread a layer of hummus underneath the tomato sauce. It’s delicious, and will make the pizzas even more filling!
