Veggie Chili

Serves 2-4 


2 tbsp extra-virgin olive oil 

1/2 large onion, chopped 

2-3 ribs of celery, sliced

2 large carrots, peeled and chopped

2-3 cloves garlic, minced 

2 tbsp chili powder

2 tsp cumin

1 (14.5 oz.) can crushed tomatoes

1 (15 oz.) cans black beans

2 tsp BBQ sauce 

1-2 tsp soy sauce 

Salt and pepper to taste 

Optional Toppings: 

Shredded cheese 

Chopped white onion 

Pickled jalapeños 


  1. Heat olive oil in a medium saucepan over medium heat. Add the onion, celery, carrots, and salt and pepper to taste, and sauté until slightly soft, about 5-7 minutes.

  2. Add the garlic, chili powder and cumin, and cook for another 2-3 minutes. 

  3. Add the crushed tomatoes, black beans, soy sauce, BBQ sauce, and more salt and pepper to taste. Reduce to a low simmer, cover, and cook for 20-30 minutes. 

  4. Serve with additional toppings as desired.
