Chicken Sausage and White Bean Skillet

Serves 2-4


2 tbsp extra-virgin olive oil

1/2 large white onion, chopped 

2 links pre-cooked chicken apple sausage, thinly sliced

3-4 cloves garlic, minced 

1 (15 oz.) can white beans, drained and rinsed

2 oz. kale, stemmed and chopped

1 large green apple, cored and roughly chopped

1/2-3/4 cup crumbled walnuts, lightly toasted 

Salt and pepper to taste 


  1. Heat the olive oil in a large skillet over medium heat. Add the onion and sausage, and let cook until the onions are soft and translucent, about 6-8 minutes. 

  2. Add all remaining ingredients except for the walnuts, and season with salt and pepper to taste. Sauté until apple is slightly soft but not mushy, about 3-5 minutes. 

  3. Remove from heat, top with walnuts, and serve. 


  • You don’t really need to measure the kale by weight. Just throw in a couple of handfuls, or whatever looks right to you!

  • Personally, I like to slice the sausage very thinly so you get a little sausage with each bite
